Hello from the gardens, Super excited to finally see wild leeks (ramps) peeking through the snow in the forest. One of those spring foods I look forward to each year.
In the greenhouse the Miners Lettuce is finally sizing up and such a good spring tonic.
Miner's lettuce, also known as Claytonia perfoliata, is a highly nutritious wild green.
- a rich source of vitamins A and C,
- 10% of the daily requirement for iron (from 100g)
- significant amounts of protein, with 37.1% protein content
- a good source of vitamin K and dietary fiber, contributing to digestive health.
Miner's lettuce is versatile and can be consumed raw in smoothies, salads or cooked in dishes like soups and stews. Ps, even kids like it cause of its juicy, succulent leaves.
What to plant Now: it's the time of year that cool season crops love. Great time to plant:
- radish, arugula, spinach, rapini, leaf lettuce, mustard greens, green onions
End of April try:
- peas, beets, turnips, kale, swiss chard, carrots and start inside broccoli, cauliflower, cabbage that can be transplanted out even before the end of May. Important to harden off your seedlings! Want to find out more? Check out our Growing 101 option or Kim's Coaching.
