Hello, I hope you are well and settling into January. Easy to get some outside exercise with all the snow and changeable conditions. Glad the freezing rain was fairly light as the spring event is still fresh in our minds. It looks like lots of ups and downs over the next couple of weeks. Tom and I were talking about 2001 when we remember a winter that was intensely snowy, sometimes needing to clear the driveway 3 times in a day just to be able to get in and out. Then there's the winter I worked at Snow Valley as a lifty, we had more -30C days that winter then any on record. No matter what comes the weather continues on it's journey towards spring and the dreams of green things growing again.
Raw Local Honey from Singh With the Bees
We have a small batch of raw, unpasteurized honey available from Singh With Bees, produced at Nirvana Natura Farms in Angus. It is harvested in small quantities, very lightly strained, and never overheated.
As the weather cools, the honey is naturally beginning to crystallize, giving it a thicker, lightly creamed texture. This is a normal sign of raw honey and many people enjoy it spreadable on toast or stirred into warm drinks.
