Although the name might sound a bit strange, this soup actually combines an old Dutch mustard soup recipe with the foraged edible plant garlic mustard. The result is a delicious, creamy soup with nutritious, fresh greens for you to enjoy!

Servings: 3 Litres


3 cups garlic mustard
6 tbsp whole grain mustard
1 1/2 tsp mustard seed
12 1/2 cups chicken stock
1 1/2 cups creme fraiche
1/2 cup cream cheese
1 1/2 cups sifted flour
2 tbsp butter
2 onions
Salt and pepper to taste


- Roughly chop the garlic mustard leaves, finely chop the onions and warm up the chicken stock.
- Use butter to saute the onions in a big soup pot, then add the mustard and mustard seed.
- Add the flour and slowly pour in the chicken stock to create a smooth emulsion. Allow to cook for a few minutes.
- Add the cream and cream cheese, and stir for a few minutes.
- Add the garlic mustard leaves and let the soup simmer for about 25 minutes.
- Season the soup with salt and pepper. Can be served with crispy bacon bits on the side.
