Takes 5 minutes and lasts for at least a week in the fridge, tastes like bread & butter pickles. You can slice them in coins or sticks which looks really nice with a corrugated slicer.
2 cups white or cider vinegar
1 cup water
1 cup sugar or 1/2 cup maple syrup (or less)
1 tbsp salt
1 tsp celery seed
1 tsp mustard seed (or grainy mustard)
1 tsp tumeric
1 tsp peppercorns
pinch of dill weed (optional), slivered onion, carrots
Combine all ingredients and heat until sugar desolves. Pour over sliced cucumbers or zucchini. Store in fridge. Enjoy!
