- 1 egg yolk
- 1/4 cup lemon juice or 1/8 cup vinegar
- 2-3 anchovy fillets
- 3 cloves garlic chopped
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/3 cup vegetable oil
- 1/3 cup olive oil
1. Place the egg yolk in the food processor along with lemon juice, anchovies, garlic, salt, and pepper and blend for 1 minute or until ingredients are pureed.
2. Mix the town oils together and add slowly in a stream to the processor while it's on high.
3. Scrape down the sides of the bowl and blend for 30 seconds. Transfer dressing to a jar and store in the refrigerator.
